Egg Bites
One of my favorite breakfasts to meal prep! These only require a few ingredients, come together in minutes, and clean up is minimal. If you struggle to find time to make breakfast in the morning these are the perfect solution. A protein rich breakfast is SO important for blood sugar balance and preventing cravings and energy crashes throughout the day. So, stop skipping breakfast and make these asap!
Ingredients
6 eggs
1/4 cup unsweetened milk of choice (soy works well if you want to keep it dairy free)
1/2 diced red bell pepper
1/4 diced red onion
3 diced breakfast sausage links (I like Bilinksi’s or Amy Lu’s)
1/2 tsp salt
Black pepper
1/4 cup crumbled feta (omit for dairy free)
Method
Use a regular sized muffin tray and line 9 cups with muffin liners.
Divide chopped veggies and sausage amongst the 9 muffins liners.
Beat eggs with milk, salt, and pepper.
Pour over the veggies and sausage.
Sprinkle with crumbled feta.
Bake at 350 for 18 minutes or until fully cooked.
